The GLA monthly creel report regularly shows that Glen Lake anglers’ most-caught fish is yellow perch. They are often caught in Little Glen or in the drop-offs around Big Glen. The best perch recipe starts with perch that you, your child, or your grandchild has caught in Glen Lake.
Clint Couturier, the Manager of Anderson’s IGA meat and fish department in Glen Arbor, recommends using Drake’s for your batter. And if your fishing does not result in much catching, Clint also has perch fillets that you can catch in his freezer.
INGREDIENTS:
Perch fillets
1 cup Drake’s Crispy Frymix
12 oz beer (room temperature)
A pinch of cayenne pepper (optional)
DIRECTIONS:
1. Clean the fish and pat dry.
2. Preheat vegetable oil in a deep fryer or heavy pan to 375 degrees.
3. Mix together the Crispy Frymix and beer by whisking thoroughly until well blended.
4. Dip the perch into the batter and then place in the hot oil. Cook until golden brown.
5. Remove carefully from the hot oil and place on a wire drying rack.
6. Serve with tartar sauce.
Optional: For a little spice, Clint says to add some cayenne pepper to the batter mix.
